Jon,

Where did you get the chit malt from?

http://www.brewbrothers.biz/Chit-Malt-German

I bought a few lbs last year to use in German beers and I like it at ~ 5%. Honestly though, I can't say I like it any better than using ~ 2-2.5% flaked barley. Results are very comparable and flaked barley is easier to source. When the chit runs out (soon) I'm gonna just use flaked barley.

Nice label Erik. How is that one tasting for you?  Enough blood orange?

It's a great tasting beer.  Goes down nice and easy with just a little bite from the orange.  It's hard to put the glass down.  It has some orange in the aroma, and most of the orange flavor is in the finish.  The next time I brew it, I may add some fresh zest as well, but may just leave it as it is and see how the flavors change with all grain and a proper water profile.  This was with extract and just my untreated, and almost mineral free well water.

Looks great! Brewing a Pivo-style German Pils in a couple weeks myself.

We must be cut from the same mold. Got one on deck as well. Just picked up some Saphir hops the other day for it.

Yep, got my Saphir recently, too. Only change from the Matt Brynildson recipe in BYO is that I'm using Weyermann Barke pils. I'm throwing an Oktoberfest party in a couple months, hence the O-fest tomorrow and the pils in a week or two. They definitely won't last long !

I wanted to go comp with the bock but it is way to dark for maibock, and it is off a couple points on the fg for traditional bock.  I don't think I am ready for comps yet anyway.  Still not ready for a judge telling me I don't make good beer...  Not had anyone "educated" evaluating my beers yet

thanks btw hoosierbrew

My last bottle of my wild fermented cider from this past fall. Every apple season I set aside a glass jug of freshly pressed cider and simply put an airlock on it. Its always my favorite so I really should do more of it like that. I think the apples around here have some good beasties on them. It has just a hint of funk and sour after going through a phase a month or so after fermentation of more pronounced sourness. Its not overly dry. No finings were used.
