I’m gonna indulge something I know this audience will appreciate, hope it’s okay. Last night I cracked open a 2018 & 2010 Bigfoot. It is amazing how well the hop presence remains 10 years on! Both were lovely. A beautiful contrast. I’m of the opinion that Bigfoot peaks at years 2-4.

Yeah, I think they need at least a year on them. I mentioned this before on here, my buddy brought over a Barleywine that I made 10 years ago that he had stuffed in the back of his beer fridge. It was still very nice and drinkable with hop presence. It probably helped that it was refrigerated for most of that time.

Thanks! Turned out very nice. Might need some tweeks for next attempt but solid.

Very nice! Did you back sweeten it? My buddy gave me a bunch honey from his hives last summer. The honey ranged in different colors according to the time of year of blossoming flowers. I made a standard mead with it and decided to add some vanilla beans. I back sweetened just right for my taste and it is already very enjoyable.

No, we almost never backsweeten our mead. I generally find the mouthfeel and taste of the honey has plenty of perceived sweetness for my taste and my wife is the same. I have found almost every commercial mead that I have tried to be cloyingly sweet. But that’s personal taste and brewing to personal taste is one of the joys of making your own.

It was very nice. Lots of caramel fruity flavors, C hops, cleaner crisper profile than the 10 by a good bit.
