I like to use rye a lot, usually at about 20%.  I found it interesting recently after making a rye pale ale, and using very pale colored malts with no crystal or Munich for color, that the beer came out without any of that beautiful reddish color one expects.  It seems that all that color comes from the other malts and not the rye content.  I guess the rye puts an accent on it.

41% pilsner
39% red x
17% rye malt
3% chocolate rye


On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
Up Next: mexi lager, Germerican pale ale

Nice! I'm intrigued by the RedX malt...might have to pick some up to experiment with in the future.

I've got my Christmas Warmer on tap now...lightly spiced, fermented with kveik. Interesting beer, in both the good way and the "I'm glad I only made 3 gallons of this" way. I've dropped off a few growlers with friends, and have just a few glasses left in the keg. That means I'll be able to swap in a new keg by Christmas!
