About the Speaker

Brian Trout is a San Diegan polymath, fueled by a contagious passion for handcrafted quality. He can be found brewing beer, making cider, mead, kombucha, cheese, roasting coffee, cold smoking edibles, and experimenting with wild fermented foods. Brian is an active member of San Diego’s highly regarded QUAFF and Society or Barley Engineers homebrewing clubs, founder and president of SD Craft Ciders, and he is President of San DiFuego, where he has been honing his craft of making salsas, fermenting hot sauces, and mustards. He is a Beer Judge Certification Program (BJCP) beer judge, mead judge, certified Cicerone, sensory-trained cider judge, and instructor of numerous homebrewing, cider pressing, and international seminars and workshops (often in Mexico). Brian has earned numerous regional and national awards and medals.
