Carbon dioxide (CO2) is considered the standard gas used to carbonate beer, but exciting things are happening in the world of nitrogen that shouldn’t be overlooked. During the 2015 National Homebrewers Conference, attendees were walked through the process of brewing and serving nitrogen beers on a homebrewing scale.
Justin Drapeau, better known simply as Juice, gave the nitro-themed seminar during the conference. Head brewer of the Oskar Blues brewery in Lyons, Colo., Juice started out on the kegging line, worked his way up to lead brewer and eventually took on the task of spearheading Oskar Blues’ pilot nitro program. In 2014, Juice and the Oskar Blues gang took things one step further when they released the first-ever craft beer in a nitro can.
